“Bowl meals” are one of my favorite types of meals. After saying that, I quickly realized I have almost no “bowls” on the blog. Something I need to address ASAP!
Typically bowls require minimal prep, a quick cook time and combines everything in one dish. These Greek chicken bowls are everything I love about bowl meals with a Greek flare.
This is one of those meals where all the individual components can be prepared ahead of time and stored individually until ready to eat. Making it perfect for a quick and filling lunch that can be easily assembled at home or transported for a lunch at work. It’s also perfect for delicious and healthy meals on those crazy weeknights.

Good for you because they are packed with lean proteins, lots of fresh vegetables, and light on carbs if you opt for a quinoa or cauliflower rice base.
And, they are AH-MAZING. Why? Because that tangy, cool cucumber tzatzki sauce and salty feta. All the flavors that belong in a traditional Greek dish.
It’s truly hard to go wrong with these bowls. They can be served right when the chicken comes off the grill or later in the week. I love the combination of cucumbers, olives, tomatoes and onions but you can use any other vegetables you’d like to customize to your taste.
Twist things up a bit by making a wrap or stuffing in a pita. Take all these ingredients and put in a fluffy pita or delicious wrap for a spin. Be sure to serve with your favorite pita chips and lots of yummy tzatziki sauce.
Greek Chicken Bowls
Greek chicken bowls are so easy but loaded with tons of delicious, fresh foods. Juicy chicken, fresh vegetables, salty feta and creamy Tzatziki sauce atop a bed of delicious {cauliflower} rice. This meal is bright, flavorful, refreshing and a family favorite.
Ingredients
- 2 Boneless, skinless chicken breasts
- 3 Tbsp olive oil
- Zest of 1 lemon
- 2 Tbsp freshly squeezed lemon juice
- 2 Cloves garlic, minced
- 1 Tsp dried oregano
- 1/2 Tsp Kosher salt
- 1/4 Tsp black pepper
- Pinch red pepper flakes, optional
- 2 Cups cooked cauliflower rice, rice, or quinoa
- 2 Cups grape tomatoes, halved
- 2 Cups chopped cucumbers
- 1 Cup Kalamata olives, pitted and sliced
- 1/4 Red onion, thinly sliced
- 1 Cup Tzatziki sauce, store bought or homemade
- 1/2 Cup crumbled Feta
- Lemon wedges, serving
- Pita chips
- Fresh dill or parsley, for garnish-optional
Instructions
For the chicken-
- In a large bag combine chicken breasts, olive oil, lemon zest, lemon juice, garlic, oregano, salt, pepper, and pepper flakes.
- Seal bag and allow to marinate for 30 minutes to an hour, turning occasionally.
- Using a grill or grill pan, cook chicken until internal temperature reaches 165.
- Remove chicken and allow to rest for at least 5 minutes.
- Slice chicken and set aside.
To assemble-
- Divide rice among four bowls.
- Top with chicken, tomatoes, cucumbers, olives, red onion, Tzatziki sauce, and feta. Add pita chips to the bowl or serve along side. Garnish with parsley or dill. Serve with a lemon wedge.

Not a fan of cauliflower rice? Swap it for quinoa or traditional rice. However, I love place a little oil in a skillet and put the cauliflower rice in a single layer and “crisp” it a bit.
Alternately, to ease everyone into the world of cauliflower rice, mix half regular rice and half cauliflower. As time goes by simple reduce amount of rice and increase the amount of the cauliflower rice over time.
My crew actually really enjoys cauliflower rice and they typically aren’t fans of the vegetable itself!
