I love the combination of the juicy chicken, broccoli, peppers, meaty shitake mushrooms and perfectly slurpable noodles in this stir fry.
*Side note. I’ve cooked with various types of mushrooms, but I don’t think I’ve ever cooked with shitakes until now. And boy have I been missing out. These little guys are amazing. They are full of flavor, thick and very meaty. I love the addition of the different texture these added to this dish.
To finish of the dish I add a hefty sprinkle of toasted sesame seeds and fresh, chopped chives to the top. This adds a little texture and a pretty pop of color!
I love this combination of vegetables and chicken.
However, this stir fry is completely customizable. Pork or beef can be used in place of the chicken. To make this vegetarian leave the meat out all together and load up on the vegetables or add tofu.
There are tons of various vegetables that can be used; either fresh or frozen. A great frozen stir fry mix is totally acceptable and is a great way to cut more time of the prep work. Shredded cabbage or just a bag of coleslaw mix is another great addition. Shredded carrots, sugar snap peas, zucchini, and water chestnuts are just a few options that would be amazing in stir fry.
This is truly a one pot meal. It’s got your proteins, vegetables and carbs all in one pot. However the addition of your favorite eggrolls or soup would pair perfectly with this meal.
Chicken Ramen Noodle Stir Fry

Ingredients
- 2 (3.5 ounce) Packages instant ramen noodles, flavor packets discarded
- 1/3 Cup chicken stock
- 1/4 Cup oyster sauce
- 1 Tbsp rice wine vinegar
- 1 Tsp Sriracha, or more, to taste
- 1 Tbsp canola oil
- 1 Pound boneless, skinless chicken thighs, diced
- 1 1/2 Cups small broccoli florets
- 1 Cup diced sweet onion
- 1 Cup diced red bell pepper
- 1 Cup sliced shiitake mushrooms
- 3 Cloves garlic, minced
- 1 Tbsp freshly grated ginger*
- 2 Green onions, thinly sliced
- 1/2 Tsp toasted sesame seeds
Instructions
- Fill a large pot with water, bring to a boil. Add ramen noodles to boiling water, cook for 3-4 minutes, until tender. Drain, rinse with cold water and set aside.
- Combine chicken stock, oyster sauce, rice wine vinegar and Sriracha in a medium bowl and whisk to combine.
- Add canola oil in a large skillet and place over medium heat. Once oil is hot, add the chicken and cook until golden and cooked through, about 4-6 minutes. Remove from pan and set aside.
- Add broccoli, onions, bell peppers and mushrooms to the skillet and cook until tender, 4-5 minutes.
- Add garlic and ginger and stir to combine, cook until fragrant, about 1 minute.
- Add chicken stock stir to combine, being sure to scrape up any bits on the bottom of the pan.
- Add noodles and chicken to the mixture, stir to combine. Cook until heated through.
- Serve immediately. Garnish with green onions and sesame seeds, if desired.
Notes
*Ginger paste may be used in place of freshly grated ginger.
