These cookies were initially made on a whim and have quickly grown to be a favorite and frequently requested cookie!
I have several folks that are lovers of apricots, including me! However, desserts involving apricots are not readily available. At least not around here. So, I took it upon myself to create a dessert that included this sticky, tart fruit.
I’ve made a white cake with apricot filling for my sister-in-law before and it truly was a hit! But, cake is one of those desserts that requires a plate and fork and needs a bit more time to make.
Cookies, however, are easy to make, easy to eat, always a hit with my crew and easy to transport. So, a cookie filled with bits of dried apricot would fit the bill perfectly.
Now cookies.
Cookies aren’t all created equal. Just like there are a gazillion flavors of ice cream to quench all the cravings, there are also numerous types of cookies. You’ve got fluffy cake cookies, thin, crispy, thick, chewy and so many others. I’m a thick, chewy, stick-to-your-teeth cookie person.
I want my cookies to be a bit dense, to have some chew and be at least slightly thick. And these cookies check all those boxes. They are thick, have a good chew to them and dense.
These cookies are perfection. The base is flavorful and not overly sweet and then it’s loaded with creamy white chocolate and pieces of tart and sticky dried apricots. The flavors are a match made in heaven.
Truly amazing warm and straight out of the oven. A tall glass of cold milk is all you need to make this dessert perfection.
White Chocolate Apricot Cookies
White chocolate apricot cookies are the cookie of all cookies. Buttery, chewy cookies are jam packed with creamy bits of white chocolate and pieces of gooey, tart apricot pieces. White chocolate apricot cookies are easy to make and an instant favorite!
Ingredients
- 1 Cup unsalted butter, room temperature
- 1 1/4 Cup brown sugar
- 1/4 Cup granulated sugar
- 2 Eggs, room temperature
- 1 1/2 Tbsp vaniall
- 1 Tsp coarse sea salt
- 1 Tsp baking soda
- 1 Tsp baking powder
- 2 1/2 Cup flour
- 2 Cups (1 12oz package) white chocolate chips
- 1 Cup dried apricots, cut into quarters
Instructions
- Preheat oven to 350. Line a baking sheet with parchment paper. Set aside.
- Combine salt, baking soda, baking powder and flour in a bowl and whisk to combine. Set aside.
- Place butter in a large bowl, beat on high till smooth, about 1 minute. Add the brown and granulated sugar and beat on high until light and fluffy, about 2-3 minutes.
- Add the eggs and mix on high until mixture is pale yellow in color and light and fluffy, about 5 minutes.
- Add vanilla and mix until just combined.
- Slowly add the flour mixture to the butter mixture and mix until just combine.
- Add the white chocolate and apricots and fold in.
- Using a large cookie scoop (mine is 2 tablespoons), scoop a heaping scoop of dough* and place on the prepared baking sheet about 2 inches apart.
- Place in the preheated oven and bake for 10-12 minutes, until the edges are golden brown,
- Remove and allow to cool on baking sheet for 5 minutes. Transfer to a cooling rack until completely cool.
- Store in an airtight container.

*I use a 2 tablespoon cookie scoop, but the actual scoop of dough is about 3 tablespoons since I use a heaping scoop of dough for each cookie.
