Most of you know I have an infatuation with brown butter. It’s delicious, adds so much flavor to any recipe it’s added to and can be used in sweet and savory dishes. The stuff is amazing. In a food category all of it’s own. My little man is slightly obsessed with bananas. I sometimes wonder if he’s going to turn into a monkey with the amount of bananas he consumes. One day I’ll probably walk in and see him swinging from the ceiling fan, at that point in time I’ll know he’s had one banana too many! I guess if you’re going to have a habit or obsession that’s a good one to have, at least it’s healthy!
Since I’m obsessed with brown butter and can never seem to put it in enough recipes, and with Tucker’s addiction to bananas it’s guaranteed we always have butter and bananas on hand. So when I came across these waffles on Two Peas and Their Pod there was no question about it, I had to make them. This recipe fuses my love of brown butter and Tucker’s love of bananas to make one delicious and satisfying waffle.
I am always looking for new recipes to make for breakfast, as well as new ways to utilize those overripe bananas. Well these waffles take care of both of those needs; a new breakfast item and a way to use up those brown bananas. I love waffles for so many reasons; they are easy to make, can be made in advance and frozen for later consumption and it gives me a reason to break out my waffle maker. I love my waffle maker, there’s just something so fun about pouring that batter over the hot irons and hearing the sizzle…call me wierd but I enjoy that!
These waffles are nothing short of amazing. They have a nuttiness from the brown butter and it pairs wonderfully with the sweetness of the ripe bananas. They are very moist, airy and light with a slight crisp around the edges. Providing a meal that is full of flavor, filling and doesn’t weigh you down. Top with fresh banana slices and a side of fresh assorted fruit and you’ve got an easy and flavorful meal in no time.
Brown Butter Banana Waffles
Ingredients:
1 Cup all purpose flour
1 Cup whole wheat flour
1/2 Cup light brown sugar, packed
1 Tbsp baking powder
1 Tsp salt
1/2 Tsp ground cinnamon
1/8 Tsp groun nutmeg
8 Tbsp (1 stick) unsalted butter, sliced
3 Large eggs, separated
2 Cups buttermilk
2 Tbsp honey
1 Tsp vanilla extrac
3 medium ripe bananas
