I’m the cook, baker, writer and photographer behind Lynsey Lou’s.
Here’s a little about me, the person behind the blog! I am a self-proclaimed foodie. Some of my earliest and fondest memories take place in the kitchen. I can remember hearing my dad pull out the mixer and I eagerly ran into the kitchen, grabbed a stool and pulled it up to the counter so I could help make whatever goodies were about to be baked. I have no formal training, am no chef by any means but I love food and enjoy watching others find joy by eating the food I’ve prepared. Growing up I was a shadow to my mom, dad, MaMaw and Grandma. When they were in the kitchen, I was right behind them watching (and helping) with their every move. They all encouraged my enthusiasm in the kitchen and I know it’s because of them I have my love of food.
I started blogging in 2008 strictly as a way to keep track of recipes. Blogging as a means of keeping recipes in order quickly changed to a love and passion of writing about the latest recipe I made and sharing it with others. I love trying new recipes with a vast array of ingredients. I will always try something…at least once. While I love to experiment and develop new recipes, there are times where a familiar taste of my childhood is needed. During those times I find myself sifting through recipes cards and cookbooks from my MaMaw and Grandma’s kitchen. They are no longer here, but I find comfort in cooking “with them” and setting one of their meals on the table for my family to enjoy. No matter how many new foods I try, I always enjoy going back to my roots.
I find inspiration from many sources; a delicious meal I had on a rare date night, a fun dish I saw on t.v., family recipes, various cookbooks, magazines and of course the most popular virtual bulletin board ever, Pinterest. I try my best to cook as seasonally as possible. Typically I’m not whipping up a batch of chili in July or a fresh tomato based recipe in January. Most recipes I share are simple, basic and doable for weeknights. (Being a mom, juggling an infant (on the verge of being a toddler), homeschooling a 3rd grader and keeping up with life and everything in between doesn’t allow for me to spend numerous hours standing over the stove) There are occasions I’ll get in the kitchen and have to time to play around and try out more labor intensive recipes and when those times present themselves I will share those recipes with y’all.
I have been married to my best friend, Spencer, for over 10 years. And yes, it’s true what they say, food truly is the way to a man’s heart. All it took was one bite and we’ve been together ever since. He’s my biggest fan and supporter. We both share a love of food; while I enjoy the cooking process he more enjoys the eating. Perfect pair, right? With that being said, it’s no surprise Spencer is the #1 taste tester of all the recipes you see here. If he doesn’t like it, odds are it’s not going to be making an appearance here on the blog.
We have 2 amazing kiddos. Tucker is my crazy, goofy, tender-hearted, compassionate, sidekick who has been by my side since day one. Y’all, he teethed on frozen sticks of butter for goodness sake! When the mixer came out he darted towards the kitchen making a mixing sound while spinning his hand in the air and was doing this before he could speak. And his first word was apple. He’s definitely a child after my own heart. The verdict is still out on the newest addition to our family, Ms. Maddie. She’s full of energy, has a massive personality, is so chatty (already) and definitely makes her presence known. She’s always under my feet in the kitchen and feels the need to open all the kitchen drawers while I’m in the midst of cooking. She’s a mega fan of food. Excitement takes over when she has the first glimpse of food and if it’s not in her mouth in a millisecond, well, she lets us know we aren’t moving fast enough! If we’re eating, she believes whole-heartedly she should be eating (regardless if she finished eating right before we eat). To say she loves food is definitely an understatement. We may just have a mini foodie in the making with this one too!
